Thaybah is a home kitchen. The cooking happens in a house, by one person, in the amounts one person can cook well. That is the whole idea, and it is why the menu is short and why every dish needs notice.

Nothing is frozen ahead, nothing is bought in. A dish is not cooked until somebody orders it, which is what the notice is for.
